Everything starts with the dough, the fire, and a little patience.

We roll the pasta each morning, keep the wood oven lit all night, and let the sauces take the hours they need. Nothing arrives frozen; nothing leaves the pass in a hurry.

Twenty-five years in the same corner room. Same tables, same candles, mostly the same faces coming back.
